Homemade Burritos Recipe
What you'll need:
- 8 flour tortillas
- 500g lean beef mince
- 50ml sunflower oil
- 200g can kidney beans
- 400g can chopped tomatoes
- 1 finely chopped onion
- 200ml beef stock
- 2 cloves crushed garlic
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1 tsp cumin
- 100g cheese, grated
Method
First
Saute the onion and garlic in a large frying pan with a little oil, until softened. Add the beef mince, and brown all over.
Second
Once the meat is browned, stir in the cayenne pepper, paprika and cumin powder. Add the tomatoes, beans and stock, and simmer for 20 minutes.
Third
Heat up your grill. Remove the beef and tomato mix from the heat, and spoon into the centre of your tortillas (the trick is not to overload them). Roll up the tortillas to make the classic burrito shape, and place in a baking tray, on some baking paper. Top with grated cheese.
Fourth
Grill for 2 minutes, or until the cheese has melted. Serve with fresh salad and sliced jalapenos.
