Honey, Fig, and Onion Crostini

  • 1 tbsp olive oil
  • 1⁄4 red onion, sliced
  • 1 chopped garlic clove
  • 1 tsp brown sugar
  • 2 tsp balsamic vinegar
  • 1 fig, halved
  • 1 tbsp honey
  • 2 slices of toasted baguette
  • Preheat the oven to 200C. Heat up the oil in a pan, chuck in the red onion, and soften for 5 minutes. Tip in the garlic and sugar, and cook for another 2 minutes, followed by the balsamic vinegar and 3 more minutes of gentle frying.
  • Place the halved fig on a baking sheet, and give it a good drizzle with the honey. Roast for 5 minutes in the oven. Serve by spreading the caramelised onion all over the baguette slices, and topping with the honey-roast figs. Yum!
