Honey Mustard Chicken Pasta Salad
- 300g penne
- 3 tbsp mayo
- 1 tsp runny honey
- 1 big tsp of wholegrain mustard
- 300g roast chicken, torn into pieces
- 4 sliced spring onions
- Small bunch of basil, torn
- 4 tomatoes, cut into eighths
- Cook the pasta in boiling salted water until al dente, then drain and leave to cool. Mix together the mustard, mayo and honey in a large bowl, loosen with a splash or two of water, then tip in the pasta, onions, chicken, basil and tomato, and season well. Gently mix, and serve as a main dish or a side at a picnic.
