Hot Smoked Salmon Cakes

  • 500g mashed potato
  • ½ lemon, zest and juice only
  • 2 chopped spring onions
  • 1 tbsp chopped dill
  • 2 hot smoked salmon fillets, flakes
  • 2 tbsp flour
  • Olive oil
  • Mix the mashed potato with the lemon zest, spring onions, dill, salmon and some seasoning until combined.
  • Shape the mixture into 4 thick cakes, then dust in flour and fry in a non-stick pan with a good drizzle of olive oil for 5 mins on each side, or until golden and piping hot throughout. Serve with salad, capers and green olives.
