Indian Halibut Steaks

  • ½ tsp ground turmeric
  • ¼ tsp chilli powder
  • 1 tsp ground coriander
  • 2 halibut steaks
  • Pinch of sea salt
  • ½ tsp each of grated ginger and garlic
  • 2 tbsp oil
  • 2 tsp flour
  • Fresh lemon juice
  • Rice or naan, to serve
  • Rub the turmeric, chilli powder, coriander, sea salt, ginger and garlic, and 1 tbsp of oil all over the fish steaks, then dust all over with the flour.
  • Heat the remaining oil in a frying pan and fry the halibut steaks for 4 mins, then flip over and fry for 3 mins on the other side. When cooked through and slightly crisp, remove from the pan and season with a squeeze of lemon. Serve immediately with rice or naan and your choice of salads.
