Indonesian Mackerel Fried Rice

  • 1 tbsp oil
  • 2 beaten eggs
  • 1 tbsp red curry paste
  • Pinch of sugar
  • 800g cooked basmati rice
  • Bunch of spring onions, sliced
  • 150g peas
  • 2 tbsp soy sauce
  • 4 smoked mackerel fillets, flaked
  • ½ cucumber, sliced
  • Heat the oil in a wok and tip in the eggs. Swirl to coat the base of the pan, then cook for 1 minute before flipping and cooking for another minute until set. Remove and chop into ribbons.
  • Add the curry paste and sugar, cook for 1 minute, then tip in the rice and stir to coat. Add the peas and spring onions, stir-fry for 3 mins before adding the sauce and gently stirring in the egg ribbons and mackerel. Divide between bowls, garnish with cucumber and serve with more soy sauce.
