Istanbul Couscous
- 250g couscous
- 1 tsp ground cumin
- 1 tsp smoked paprika
- Salt and pepper
- 1 red onion, peeled and finely chopped
- 1 cucumber, chopped
- 2 tomatoes, chopped
- 1 red chilli, chopped
- 1 bunch of mint leaves picked
- ½ bunch of coriander, chopped
- 1 bunch of parsley, chopped
- 1 tbsp tomato purée
- 2 tbsp olive oil
- ½ lemon, zest and juice
- Place the couscous in a large bowl, and stir in the cumin, paprika, and a decent pinch of salt. Cover with boiling water, and leave to absorb for 10 mins. When ready, fluff with a fork and stir in the tomato purée, then add all of the chopped vegetables and herbs. Season with lemon zest and juice, drizzle with the oil, and serve.
