Istanbul Couscous

  • 250g couscous
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper
  • 1 red onion, peeled and finely chopped
  • 1 cucumber, chopped
  • 2 tomatoes, chopped
  • 1 red chilli, chopped
  • 1 bunch of mint leaves picked
  • ½ bunch of coriander, chopped
  • 1 bunch of parsley, chopped
  • 1 tbsp tomato purée
  • 2 tbsp olive oil
  • ½ lemon, zest and juice
  • Place the couscous in a large bowl, and stir in the cumin, paprika, and a decent pinch of salt. Cover with boiling water, and leave to absorb for 10 mins. When ready, fluff with a fork and stir in the tomato purée, then add all of the chopped vegetables and herbs. Season with lemon zest and juice, drizzle with the oil, and serve.
