Italian-American Tomato Vodka Pasta

  • 500g penne, cooked al dente
  • 200ml passata
  • 2 tbsp olive oil
  • 4 basil leaves
  • 2 sliced garlic cloves
  • 200ml cream
  • 1 shot of vodka
  • 60g butter
  • 1 tbsp pepper
  • Salt
  • 3 tbsp grated parmesan
  • Make the sauce by gently frying the garlic in some olive oil in a saucepan. Add the passata, season well, and add the basil leaves. Cook for 10 minutes.
  • Melt the butter in a large frying pan and add the pepper and cooked pasta. Toss well to coat the pasta in butter, and over a high heat, pour in the tomato sauce and cream. Add the vodka, toss again, and turn the heat off. Sprinkle with parmesan and serve immediately.
