Italian Meatball and Tomato Traybake

  • 500g beef steak mince
  • 2 crushed garlic cloves
  • 2 tsp dried Italian herb mix
  • ½ tsp ground cinnamon
  • 1 tsp ground cumin
  • 20g fresh breadcrumbs
  • 2 red onions, cut into wedges
  • 1 tbsp olive oil
  • 2 x 400g tins of quality chopped tomatoes
  • 1 tbsp ketchup
  • 100g feta
  • Preheat the oven to 220C. Place the mince, half the garlic, 1 tsp herbs, the cinnamon, cumin and breadcrumbs in a bowl. Grate in 3 wedges of onion, mix together and shape into 16 golf ball-sized meatballs. Set aside.
  • Place the remaining onion wedges in a bowl and toss in the oil. Tip the tomatoes into a roasting tin and stir in the remaining herbs, garlic and the ketchup. Arrange the onions and meatballs in a single layer on the tomatoes, crumble over the feta and roast for 40 mins. Serve with rice or crusty bread.
