Italian Sausage, Beans and Cheese

  • 2 tbsp olive oil
  • 50g chopped red onion
  • 120g spicy Italian sausage or chorizo, meat crumbled
  • 50ml marsala wine
  • 120g fava beans, shelled
  • 120g peas
  • Handful each of basil, mint and parsley, chopped
  • 30g soft goat’s cheese
  • 1 handful of rocket leaves
  • Heat 4 tbsp of oil in a saucepan. Add the onions and some seasoning, then fry until softened. Add the sausage meat, cook until browned, then add the wine and allow to evaporate.
  • Blanch the beans and peas in salted boiling water for 1 min. Drain, then mix with the sausage mixture. Cook for 5 mins, then add all the herbs and a glug of olive oil. Season well, then serve with crumbled cheese on top and a pile of rocket leaves.
