Italian Spicy Fish Stew
- 2kg mixed fish and shellfish - whatever you like!
- 8 tbsp olive oil
- 1 onion, sliced
- 2 chopped garlic cloves
- 1 kg tomatoes, chopped
- 125ml red wine
- Chopped red chilli, to taste
- 3 tbsp parsley, chopped
- 1⁄2 tsp fennel seeds
- Salt and pepper
- If it isn’t prepared already, cut the fish and shellfish into chunks. Put the oil, onion, and garlic into a large pan, and gently fry for a minute or two. Add the tomatoes, wine, chilli, fennel, parsley, and plenty of salt and pepper. Cook for 20 mins.
- Start adding the fish - largest pieces first, and ending with shellfish. Cook for 5-10 minutes or until the fish is firm and any shellfish have opened. Serve with garlic bread - delicious!
