Italian Spicy Fish Stew

  • 2kg mixed fish and shellfish - whatever you like!
  • 8 tbsp olive oil
  • 1 onion, sliced
  • 2 chopped garlic cloves
  • 1 kg tomatoes, chopped
  • 125ml red wine
  • Chopped red chilli, to taste
  • 3 tbsp parsley, chopped
  • 1⁄2 tsp fennel seeds
  • Salt and pepper
  • If it isn’t prepared already, cut the fish and shellfish into chunks. Put the oil, onion, and garlic into a large pan, and gently fry for a minute or two. Add the tomatoes, wine, chilli, fennel, parsley, and plenty of salt and pepper. Cook for 20 mins.
  • Start adding the fish - largest pieces first, and ending with shellfish. Cook for 5-10 minutes or until the fish is firm and any shellfish have opened. Serve with garlic bread - delicious!
