Italian-Style Roast Sea Bass

  • 250g roasted peppers from a jar
  • 1 red onion, sliced
  • Drizzle of olive oil
  • 4 whole garlic cloves
  • 3 big lemon slices
  • 2 whole sea bass
  • 15 kalamata olives
  • 25g toasted pine nuts
  • Handful of chopped parsley
  • Preheat the oven to 200C. Toss the peppers and onions with salt and pepper and a splash of olive oil, then spread onto a baking tray and cook for 5 minutes.
  • Toss in the garlic and lemon, then place the fish on top and brush with more oil. Season well, and roast for 15 mins. Stir in the olives and pine nuts, roast for another 5 mins, then serve with a squeeze of lemon and a scattering of parsley. Nice!
