Italian Tomato and Artichoke Side Platter

  • Small pack of basil, finely chopped
  • 4 tbsp olive oil
  • 600g quality tomatoes
  • 1 small red onion, sliced
  • 175g chargrilled artichokes from a jar
  • Make the dressing by mixing the chopped basil with the olive oil in a bowl, and seasoning well. Slice the tomatoes, lay them on a platter, then top with the artichokes and onion slices. Scatter over with some whole basil leaves, drizzle with the oil, and grind plenty of black pepper. Perfect as a side with burgers, sausages, or barbecued meats!
