Jackfruit and Hoisin Lettuce Cups

  • 400g tin of jackfruit in water
  • 3 tbsp hoisin sauce
  • ½ tbsp soy sauce
  • 12 Little Gem lettuce leaves
  • 2 tsp white sesame seeds
  • 1 sliced spring onion
  • 1 sliced red chilli
  • Shred the drained jackfruit between two forks, being careful to remove any seeds or tough lumps. Mix the jackfruit with the soy sauce, hoisin sauce and a pinch of sea salt.
  • Divide the jackfruit between Little Gem lettuce leaves. Sprinkle with sesame seeds, then scatter with the chopped chilli and spring onion to serve.
