Japanese ‘Furikake’ Fries
- For the Seasoning
- 2 sheets of nori
- 6 tbsp garlic granules
- 2 tsp chilli flakes
- 1 tbsp black sesame seeds
- 3 tbsp white sesame seeds
- For the Fries
- 1 kg baking potatoes
- 1.5 litres veg oil, for frying
- For the Sauce
- 2 tbsp honey
- 1 tbsp oyster sauce
- 1 tbsp fish sauce
- Make the seasoning by mixing the nori, garlic and chilli in a food processor and blitzing until well combined. Transfer to a bowl and stir in all the sesame seeds. Make the fries by thinly slicing the potatoes into matchsticks, and leaving them to soak in a large bowl of cold water for 10 mins or so.
- Heat the oil in a large saucepan to sizzling temperature. Pat the matchsticks dry, then fry in batches until golden brown and crisp. Transfer to a serving dish, mix together the sticky sauce ingredients and drizzle all over the fries. Sprinkle over the seasoning mix, and serve hot. Delicious!
