Jerk Cod with Creamy Corn
- 2 x 120g cod fillets
- 1 tbsp olive oil
- 2 tsp jerk seasoning
- Bunch of spring onions
- 400g tin of sweetcorn
- 2 tbsp cream
- 20g grated parmesan cheese
- ½ red chilli, deseeded and chopped
- Small bunch of coriander, chopped
- Preheat the oven to 200C. Place the cod fillets on a baking sheet and rub with half the oil, all the jerk seasoning and some salt and pepper. Cook in the oven for 15 mins or until cooked through. Meanwhile, heat the griddle and splash in the remaining olive oil. Add the spring onions to the pan and cook for 10 mins to char and soften. Set aside.
- Add the corn to a saucepan, stir through the cream and warm through for 2 mins. Blitz the corn with a stick blender, then stir through the chilli, parmesan, half the coriander and some seasoning. Serve the creamed corn with the cod and charred spring onions - delicious!
