Kale, Lemon, and Sesame Salad

  • 400g kale
  • 1 tsp sea salt
  • 1⁄2 lemon, juice only
  • 1 tbsp honey
  • 3cm piece of fresh ginger, chopped
  • 2 tbsp sesame seeds
  • Olive oil, for drizzling
  • Prep your kale by pulling the leaves off the stalks. Finely chop the stalks, then roughly chop the leaves. Wash well, and drain.
  • Place the kale in a bowl with the salt, as well as the lemon juice and the honey. Massage the leaves in your fresh dressing for a couple of minutes, being sure to bruise them in order to soak up all the juices. Leave for 30 mins, then pour off any excess liquid. Add the ginger and seeds, and mix well as you dress with olive oil.
