Kangaroo Steaks in Red Wine Sauce
What you'll need:
- 4 kangaroo steaks (other types of steak are also fine!)
- A glass of good red wine
- 1 small onion, finely chopped
- 1 crushed garlic clove
- 1 tsp chopped chives
- 125 ml single cream
Method
First
First, marinade your roo steaks. Combine the garlic, onion and chives in a bowl with the wine. Add your steaks, and get them well and truly covered with the mixture. Cover this with plastic wrap, and stick the bowl in the fridge for at least a couple of hours or overnight.
Second
Get the meat back up to room temperature before frying them off. Add some oil to a pan, and fry the steaks on a high heat for two minutes on each side to seal them, and then another two minutes for a nice, rare steak. Kangaroo meat is very lean, and so overcooks easily - make sure you keep an eye on the timer.
Third
Remove the meat from the pan, and cover. Put the remaining marinade and wine into the pan to deglaze it, getting all the nice meat juices off the base. Mix in the cream, and stir it up as you bring it to the boil. Simmer for three minutes, before returning the meat to the pan and coating the steaks in your wine and cream sauce, and heating them through. Serve with your favourite vegetables.
