Kerala King Prawns
- 400g king prawns, raw
- 2 tsp turmeric powder
- 3 tsp chilli powder
- 4 tsp lemon juice
- 40g ginger, grated
- 1 tbsp veg oil
- 4 curry leaves
- 2 green chillies, halved
- 1 sliced onion
- 40g grated coconut
- ½ bunch of coriander, chopped
- Black pepper
- Toss the cleaned prawns in the turmeric, chilli powder, grated ginger, and lemon juice. Set aside for 15 mins. Heat the oil in a pan, add the curry leaves, onion, and chilli, and cook for 10 mins to soften. Season well with black pepper.
- Toss the prawns into the pan along with the marinade, and stir fry until pink and juicy. Season again, and add a squeeze of lemon juice. Serve with a sprinkling of coconut and coriander, and some cooked rice if you fancy.
