Kerala King Prawns

  • 400g king prawns, raw
  • 2 tsp turmeric powder
  • 3 tsp chilli powder
  • 4 tsp lemon juice
  • 40g ginger, grated
  • 1 tbsp veg oil
  • 4 curry leaves
  • 2 green chillies, halved
  • 1 sliced onion
  • 40g grated coconut
  • ½ bunch of coriander, chopped
  • Black pepper
  • Toss the cleaned prawns in the turmeric, chilli powder, grated ginger, and lemon juice. Set aside for 15 mins. Heat the oil in a pan, add the curry leaves, onion, and chilli, and cook for 10 mins to soften. Season well with black pepper.
  • Toss the prawns into the pan along with the marinade, and stir fry until pink and juicy. Season again, and add a squeeze of lemon juice. Serve with a sprinkling of coconut and coriander, and some cooked rice if you fancy.
