Kerala Prawns
- 400g raw king prawns
- 2 tsp ground turmeric
- 3 tsp chilli powder
- 4 tsp lemon juice
- 40g ginger, half grated, half sliced into matchsticks
- 1 tbsp oil
- 4 curry leaves
- 2 green chillies, halved and deseeded
- 1 sliced onion
- 40g grated coconut
- Small bunch of coriander leaves
- 1 tsp cracked peppercorns
- Toss the prawns in chilli powder, turmeric, lemon juice and the grated ginger. Set aside. Heat the oil in a pan and fry the chilli, curry leaves, sliced ginger and onion for 10 mins, then stir in the cracked peppercorns. Toss in the prawns and their marinade and stir-fry for 2 mins or until pink and cooked. Add a squeeze of lemon and serve with the grated coconut and coriander leaves.
