Kerala Prawns

  • 400g raw king prawns
  • 2 tsp ground turmeric
  • 3 tsp chilli powder
  • 4 tsp lemon juice
  • 40g ginger, half grated, half sliced into matchsticks
  • 1 tbsp oil
  • 4 curry leaves
  • 2 green chillies, halved and deseeded
  • 1 sliced onion
  • 40g grated coconut
  • Small bunch of coriander leaves
  • 1 tsp cracked peppercorns
  • Toss the prawns in chilli powder, turmeric, lemon juice and the grated ginger. Set aside. Heat the oil in a pan and fry the chilli, curry leaves, sliced ginger and onion for 10 mins, then stir in the cracked peppercorns. Toss in the prawns and their marinade and stir-fry for 2 mins or until pink and cooked. Add a squeeze of lemon and serve with the grated coconut and coriander leaves.
