Keralan Prawns

  • 450g king prawns, peeled
  • 2 tsp turmeric
  • 4 tsp Kashmiri chilli powder or similar
  • 3 tsp lemon juice
  • 40g ginger, half grated, half sliced into matchsticks
  • 1 tbsp veg oil
  • 4 curry leaves
  • 3 green chillies, deseeded and halved
  • 1 sliced onion
  • 40g grated coconut
  • ½ bunch of coriander, leaves only
  • Toss the raw prawns in the chilli powder, turmeric, grated ginger and lemon juice. Set aside for 10 mins to marinate. When ready, heat the oil in a pan and add the chilli, sliced ginger, onion and curry leaves, and cook for 10 mins. Add a good grind of pepper.
  • Toss the prawns into the pan along with the marinade, and stir-fry for about 2 mins or until the prawns have turned pink. Season and add another squeeze of lemon, then sprinkle with coconut and coriander to serve.
