Kimchi and Prawn Cocktail Boats

  • 1 Baby Gem lettuce, leaves separated
  • 2 tbsp mayo
  • 1.5 tbsp ketchup
  • ½ tsp sriracha
  • ½ tsp soy sauce
  • ½ tsp fresh lemon juice
  • 30g drained kimchi
  • 150g shelled and cooked prawns
  • 1 sliced spring onion
  • 1 avocado, chopped into cubes
  • Black sesame seeds
  • Submerge the 10 largest and most cup-shaped lettuce leaves in iced water. Meanwhile, mix the mayo, ketchup, sriracha, lemon juice and soy sauce in a bowl and mix well. Finely chop the kimchi and stir into the sauce with the spring onion and prawns. Season to taste.
  • Drain the lettuce leaves and pat dry, then spoon the prawn mixture into each leaf. Top with black sesame seeds and diced avocado, and serve.
