Korean Beef Tartare

  • 500g beef fillet (the best you can afford)
  • 15g fresh root ginger
  • 4 cloves of garlic
  • 4 slices of onion
  • 4 spring onions
  • 4 tbsp soy sauce
  • 2 tsp hot red chilli powder
  • 1.5 tsp sesame oil
  • 2 tsp sugar
  • 2 little gem lettuce
  • 1 Asian pear
  • 4 quails eggs (optional)
  • First, prepare your beef by trimming away any sinew, and finely slicing. Take a few slices together, and cut into very thin strips, then place the meat into a large mixing bowl.
  • Crush the garlic, finely chop the ginger, and crush the onion (you can use a garlic press), and place in a small bowl. Add to this the finely chopped spring onions, the sesame oil, sugar, chilli powder and soy sauce, and mix together before tipping the whole lot over the beef.
  • Core and slice the pear into strips, and remove the leaves from the lettuce. Dry with a little kitchen paper. Divide the lettuce and pear between four plates, then spoon the beef and sauce over the top. Sprinkle with sesame seeds, and serve with half a quail’s egg if you’re feeling fancy.
