Korma-Style Chicken Breasts

  • 4 chicken breasts
  • 180g cream cheese
  • 2 tbsp korma paste
  • 1 tbsp coriander, chopped
  • ½ lemon, juice only
  • 1 sliced red chilli
  • 8 halved cherry tomatoes
  • Salad, to serve
  • Preheat the oven to 200C. Arrange the chicken in an ovenproof dish, and beat together the paste, cheese, and 1 tbsp of coriander with a squeeze of lemon. Spread the curry mix onto the breasts, scatter with chilli and bake for 15 mins. Add the tomatoes to the dish, cook for 10 mins more, then scatter with more coriander and serve with salad.
