Lamb and Cherry Meatballs
- 400g minced lamb
- 1 grated onion
- 3 cloves of garlic, crushed
- 50g sour cherries, chopped
- 100g pine nuts, lightly toasted and chopped
- 1⁄2 tsp paprika
- 1⁄4 tsp allspice
- 1⁄2 tsp cumin
- 1 lightly whisked egg white
- Small bunch of parsley and mint, chopped
- Salt and pepper
- 2 tbsp veg oil for frying
- In a bowl, mix together all of the ingredients - minus the oil - with a spoon, and season well. With wet hands, shape the mixture into the size and shape of golf balls.
- Heat the oil in a large pan, and then lightly fry in batches for about 10 minutes, until golden all over and slightly crisp. Serve hot with salads and some crusty bread. Nice!
