Lamb and New Potato Skewers

  • 12 new potatoes
  • 4 tbsp olive oil
  • 2 crushed garlic cloves
  • 1 tbsp chopped rosemary
  • 1 lemon, zest and splash of juice
  • 4 lamb leg steaks
  • 90g rocket leaves
  • 100g crumbled feta
  • Fire up the barbecue to get the coals glowing. Meanwhile, boil the potatoes with a pinch of salt for 12 mins or until just tender, then set aside to cool. Mix 2 tbsp of oil, the garlic, rosemary and lemon zest. Cut each lamb steak into 4 chunks, then add to the bowl and mix to coat. Add the potatoes, stir them into the marinate, then set aside for 10 mins.
  • Thread the lamb and potatoes onto 4 metal skewers and season well. Cook the skewers on a glowing barbecue for 10 mins, turning often, until the meat is browned and the potatoes are charred. Meanwhile, whisk the remaining 2 tbsp of oil with lemon juice and seasoning, and drizzle over the rocket and crumbled feta to serve alongside. Perfect!
