Lamb Chops with Minted New Potatoes

  • 500g new potatoes
  • 1 chopped red onion
  • Bunch of mint, shredded
  • 2 tbsp capers
  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar
  • ½ tsp sugar
  • 2 tbsp strong English mustard
  • 6 lamb chops
  • Rocket leaves to serve
  • Boil the potatoes in salted water until tender. Meanwhile, pop the mint, onion, capers, oil, vinegar and sugar in a large bowl and season well. Once the potatoes are cooked, tip them into the bowl and toss to coat.
  • Heat the grill to high and brush the lamb with mustard and seasoning. Grill for 3 mins on each side until caramelised but pink in the middle. Serve with the potatoes and a handful of rocket leaves.
