Lamb Chops with Minted New Potatoes
- 500g new potatoes
- 1 chopped red onion
- Bunch of mint, shredded
- 2 tbsp capers
- 3 tbsp olive oil
- 2 tbsp red wine vinegar
- ½ tsp sugar
- 2 tbsp strong English mustard
- 6 lamb chops
- Rocket leaves to serve
- Boil the potatoes in salted water until tender. Meanwhile, pop the mint, onion, capers, oil, vinegar and sugar in a large bowl and season well. Once the potatoes are cooked, tip them into the bowl and toss to coat.
- Heat the grill to high and brush the lamb with mustard and seasoning. Grill for 3 mins on each side until caramelised but pink in the middle. Serve with the potatoes and a handful of rocket leaves.
