Lamb Chops with Paprika Sweet Potatoes
- ½ pack of mint, chopped
- 1 crushed garlic clove
- 2 tbsp olive oil
- 4 lamb chops
- 2 sweet potatoes, cut into cubes
- 1 red onion, cut into 8ths
- 1 tsp smoked paprika
- Mix together the mint, garlic, and 1 tbsp of oil with some salt and pepper, and rub all over the lamb. Heat up a frying pan, render the fat of the chops on the heat for about 2 mins, then fry for 3 mins on each side. Set aside.
- Pop the sweet potatoes in a bowl, cover with film, and microwave for 8 mins. Put the red onion wedges in the pan you cooked the lamb in, fry for 5 mins, then scatter in the paprika, cook for 2 mins, then toss in the sweet potato. Season, then serve alongside the lamb with some steamed greens.
