Lamb Kofte with Tomato Sauce

  • 500g quality lamb mince
  • 1 chopped red onion
  • 1 tsp ground coriander
  • 1 tbsp chopped mint leaves
  • 8 x soaked wooden skewers
  • For the Sauce
  • 1 tbsp olive oil
  • 1 chopped garlic clove
  • 2 x 400g tins of chopped tomatoes
  • 2 tsp harissa paste
  • 1 tsp sugar
  • 200g Greek yoghurt
  • 2 tbsp pine nuts, toasted
  • Mix the lamb, onion, mint, coriander and some seasoning, then shape into 8 sausage-shaped patties. Thread a skewer through each one, then set aside.
  • Make the sauce by frying the garlic in the oil for 2 mins, then adding the harissa, tomatoes, seasoning and sugar. Simmer for 20 mins to thicken. Heat the grill to medium.
  • Grill the kofte skewers for 8 mins, turning regularly until browned all over. Spoon the sauce onto a platter, drizzle with yoghurt and place the skewers on top to serve. Scatter with pine nuts for a finishing flourish, and enjoy with flatbreads or a couscous salad.
