Lamb Kofte with Tomato Sauce
- 500g quality lamb mince
- 1 chopped red onion
- 1 tsp ground coriander
- 1 tbsp chopped mint leaves
- 8 x soaked wooden skewers
- For the Sauce
- 1 tbsp olive oil
- 1 chopped garlic clove
- 2 x 400g tins of chopped tomatoes
- 2 tsp harissa paste
- 1 tsp sugar
- 200g Greek yoghurt
- 2 tbsp pine nuts, toasted
- Mix the lamb, onion, mint, coriander and some seasoning, then shape into 8 sausage-shaped patties. Thread a skewer through each one, then set aside.
- Make the sauce by frying the garlic in the oil for 2 mins, then adding the harissa, tomatoes, seasoning and sugar. Simmer for 20 mins to thicken. Heat the grill to medium.
- Grill the kofte skewers for 8 mins, turning regularly until browned all over. Spoon the sauce onto a platter, drizzle with yoghurt and place the skewers on top to serve. Scatter with pine nuts for a finishing flourish, and enjoy with flatbreads or a couscous salad.
