Lamb, Spinach and Parmesan Salad
- ½ tbsp olive oil
- 1 lamb chop
- Salt and pepper
- For the Salad
- 100g spinach leaves, chopped
- 1 tomato, chopped
- 1 tbsp each of chopped basil, dill, chives and parsley
- 55g grated parmesan
- 1 tbsp olive oil
- Squeeze of lemon
- Rub the lamb with oil and season well, the griddle for 4 mins on each side or to your liking. Remove from the pan, allow to rest for 5 mins, then slice.
- Place the spinach, tomato, and herbs in a salad bowl and sprinkle with parmesan. Whisk the oil and lemon in a small bowl, then drizzle all over the salad. Place on a plate, and top with sliced lamb, Simple, yet perfect!
