Lamb Steak with Broccoli and Herb Butter
- 200g lamb leg steak
- 1 rosemary sprig, leaves picked
- 2 crushed garlic cloves
- 2 tbsp olive oil
- 100g blanched tenderstem broccoli
- Salt and pepper
- 30g melted butter, to serve
- 2 tbsp chopped parsley, to serve
- Add the steak, garlic, rosemary, oil and some seasoning in a bowl and stir well. Leave to sit for at least 10 mins to marinate. When ready, heat up a griddle pan and cook the steak for 2 mins on each side (for medium rare), then leave to rest for 5 mins.
- Place the blanched broccoli on the griddle and cook until nicely charred and coated in the pan juices. Place the broccoli on a serving plate, sit the lamb on top, then drizzle with the melted butter and parsley. Perfect!
