Lamb Steaks Cajun Style

  • 3 tbsp smoked paprika
  • 3 tbsp cayenne pepper
  • 4 tsp ground cumin
  • 2 tsp garlic powder
  • 1 tbsp sea salt flakes
  • 4 lamb leg steaks
  • 1 lemon, juice only
  • 3 tbsp olive oil
  • Rice and peas, to serve
  • Toss the lamb with the juice of the lemon, and set aside for about 5 mins. Sprinkle each side of the steaks with 1 tsp of the mixed spices - really rub it into the meat - and then leave to marinate for at least 2 hours in the fridge.
  • When ready to cook, smear the steaks with 2 tbsp of olive oil, and griddle for 3-4 mins on each side, or to your liking. Serve with rice and peas, or whatever else you fancy.
