Lamb’s Lettuce and Prosciutto Salad

  • 12 slices of prosciutto
  • 60g lamb’s lettuce
  • 40g shaved pecorino
  • For the Dressing
  • 1 tsp honey
  • 2 tsp Dijon mustard
  • ½ lemon, zest and juice
  • 45ml olive oil
  • 2 tbsp capers
  • Make the salad dressing by mixing together the honey, mustard, lemon juice and olive oil. Season well and stir in the capers.
  • Arrange a pair of prosciutto slices on each plate and pile some lamb’s lettuce on top. Shave over the pecorino with a vegetable peeler, then drizzle with the dressing. Serve with crusty bread and enjoy!
