Lamb’s Lettuce and Prosciutto Salad
- 12 slices of prosciutto
- 60g lamb’s lettuce
- 40g shaved pecorino
- For the Dressing
- 1 tsp honey
- 2 tsp Dijon mustard
- ½ lemon, zest and juice
- 45ml olive oil
- 2 tbsp capers
- Make the salad dressing by mixing together the honey, mustard, lemon juice and olive oil. Season well and stir in the capers.
- Arrange a pair of prosciutto slices on each plate and pile some lamb’s lettuce on top. Shave over the pecorino with a vegetable peeler, then drizzle with the dressing. Serve with crusty bread and enjoy!
