Lebanese Tabbouleh Salad Recipe
What you'll need:
- 50g Bulgar Wheat
- 50g fresh mint, chopped
- 50g flatleaf parsley, chopped
- 3 spring onions, sliced finely
- 200g tomatoes, deseeded then diced
- 3 tbsp quality olive oil
- The juice of 1 lemon

Method
First
This fresh salad starts by prepping your grains. Take your Bulgar wheat, and stick it in a sieve. Rinse through with running water, until the water is clear. Place in a bowl, and cover with 200ml of boiling water, before covering with cling film and leaving to soak for 30 minutes while you prep the rest of the salad.
Second
Chuck all of your chopped herbs (don’t worry if there are some stalks in the mix - this only adds to the flavour!) into a salad bowl, along with the tomato and spring onion. Once the Bulgar is properly soaked, add it to the bowl along with the olive oil and lemon juice. Season well, give it a good stir, and serve
