Leek and Bacon Quesadillas

  • 1 tbsp butter
  • 1 sliced leek
  • 3 chopped smoky bacon rashers
  • 1 tbsp wholegrain mustard
  • 1 tbsp chopped parsley
  • 30g grated cheddar
  • 30g grated mozzarella
  • 2 large tortillas
  • Fry the leek for 10 mins in the butter to soften, then leave to cool. Fry the bacon until crisp, and mix the leeks with the cheeses, parsley and mustard. Spread this mixture over one tortilla, then top with the bacon and the second tortilla. Dry fry the ‘sandwich’ for 2 mins on one side, then flip and cook for 1 or 2 mins more on the other. When the cheese has melted, cut into four and serve with salad.
