Leek and Bacon Quesadillas
- 1 tbsp butter
- 1 leek, sliced
- 3 smoked bacon rashers, chopped
- 1 tbsp mustard
- 30g mature cheddar, grated
- 30g mozzarella, grated
- 2 flour tortillas
- Melt the butter in a small frying pan, and fry off the leeks for 10 mins to soften, before transferring to a bowl. Fry the bacon for 5 mins, or until golden and crisp, then mix into the leeks with the mustard, parsley, mozzarella, and cheddar. Spread this mixture over one tortilla, then sandwich the other tortilla on top.
- Heat up a frying pan, and add the quesadilla and cook for 2 mins on one side, then one minute on the other. Cut into quarters, and serve.
