Leftover Turkey and Chorizo Quesadillas Recipe
What you'll need
- 1 tbsp olive oil
- 1 shallot, sliced
- 100 chorizo, diced
- 750g leftover roast turkey, shredded
- 2 plum tomatoes, diced
- 320g pack of soft tortillas
- 200g strong cheddar, grated
- Small bunch of coriander, chopped
Time: 15 mins
Serves: 6
Method
First
Heat up your oil in a pan, and gently soften the shallots until tender and translucent. Add the chorizo, and cook for a further 3-4 minutes. Stir in the turkey and the tomatoes, then take off the heat.
Second
Put half of the tortillas onto baking sheets. Spoon some turkey mixture onto each one, and top with grated cheese. Scatter the coriander over the lot, then place another tortilla on top to make a sandwich.
Third
Heat the oven to 180C. Cook the tortillas in the hot oven for 3 or 4 minutes, and then flip them over using a fish slice. Cook for a further 3 minutes until both sides are golden, then put on a board, slice into wedges, and serve. The perfect post-Christmas snack!
