Lemon and Garlic Squid
- 4 squid (approx 250g each) cleaned
- 1 lemon, zest only
- Pinch of cumin
- Pinch of sea salt
- Olive oil
- 1 crushed garlic clove
- ½ handful of fresh coriander, chopped
- Make a cut down one side of the squids’ body tubes, and open them. Mix the zest, cumin, garlic, salt and olive oil, and rub into the squid, then leave to marinate for at least 2 hours in the fridge.
- Heat up a grill plate or griddle pan until very hot, then grill the squid on both sides for a maximum of 2 mins, creating char lines and cooking the flesh. Remove from the heat, and serve on a plate with a sprinkling of salt, a squeeze of lemon, and a sprinkling of coriander. Serve with green salad.
