Lemon Chicken with Couscous

  • 4 chicken breasts
  • 1 lemon, zest and juice
  • 1⁄4 tsp chilli flakes
  • 2 tbsp olive oil
  • 500ml veg stock
  • 200g giant couscous
  • 125g torn mozzarella
  • 2 x 225g jars of marinated artichoke hearts, chopped
  • Chopped parsley
  • Bash the chicken between 2 sheets of film until 5mm thick. Place in a dish with the lemon juice, half the zest, the chilli, oil, garlic and 1 sprig of rosemary leaves. Set aside for 20 mins. When ready, griddle the chicken breasts for 3 mins on each side, or until cooked through and char-marked.
  • Meanwhile, simmer the couscous in the stock for 8 mins. Drain off the excess liquid, and stir through the rest of the chopped rosemary, the remaining zest, the mozzarella, artichoke hearts and parsley. Season well, and serve alongside the grilled chicken.
