Lemon Chicken with Giant Couscous
- 1 tbsp olive oil
- 2 chopped onions
- 500g boneless chicken thighs, each cut into 3 chunks
- 3 tbsp tagine paste
- 2 x 400g tins of chopped tomatoes
- Small bunch of fresh oregano, chopped
- Handful of mixed olives
- 2 preserved lemons, chopped
- 2 tbsp honey
- 1 chicken stock cube
- 225g giant couscous
- Parsley, chopped
- Heat the oil in a lidded casserole, and cook the onions for 10 mins. Add the chicken to the pan, cook for 5 mins more, then stir in the tagine paste, oregano, lemons, tomatoes and honey, and crumble in the stock cube. Pour in half a can of water, season well, then pop on the lid and simmer for 40 mins.
- 10 mins before serving, add the couscous to the casserole and simmer for 10 mins more. Stir in some parsley, and serve.
