Lemon Chicken with Giant Couscous

  • 1 tbsp olive oil
  • 2 chopped onions
  • 500g boneless chicken thighs, each cut into 3 chunks
  • 3 tbsp tagine paste
  • 2 x 400g tins of chopped tomatoes
  • Small bunch of fresh oregano, chopped
  • Handful of mixed olives
  • 2 preserved lemons, chopped
  • 2 tbsp honey
  • 1 chicken stock cube
  • 225g giant couscous
  • Parsley, chopped
  • Heat the oil in a lidded casserole, and cook the onions for 10 mins. Add the chicken to the pan, cook for 5 mins more, then stir in the tagine paste, oregano, lemons, tomatoes and honey, and crumble in the stock cube. Pour in half a can of water, season well, then pop on the lid and simmer for 40 mins.
  • 10 mins before serving, add the couscous to the casserole and simmer for 10 mins more. Stir in some parsley, and serve.
