Lemon, Garlic, and Cumin Squid
- 4 squid, cleaned
- 1 lemon, zest only
- Pinch of cumin
- Pinch of sea salt
- Olive oil
- 1 garlic clove, crushed
- 1⁄2 handful of coriander, chopped
- Prep your squid by making a cut down one side of the body tube, and opening it out. Mix together the lemon zest, salt, garlic, cumin, and olive oil, and rub into the squid flesh, leaving it to marinate for at least two hours in the fridge.
- When ready to cook, heat up a griddle pan until banging hot, then chuck on the squid to grill for a maximum of 2 minutes each side. When slightly charred, remove the squid, and serve immediately with your choice of salads. Nice!
