Lentil Salad and Toulouse Sausage Recipe
What you'll need
For the salad
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- 50g green beans, blanched and chopped
- 100g canned lentils, drained
- 50g parsley, chopped
- 50g fresh coriander, chopped
- 50g chives, chopped
- Salt and pepper
For the Toulouse Sausage
- 100g best quality sausage meat, shaped into a patty
- Plenty of salt and pepper
- 1 tbsp olive oil
Time: 30 mins

Method
First
Firstly, make your salad by mixing together all of the salad ingredients in a bowl, and seasoning well with salt and pepper.
Second
Rub the sausage meat patty with olive oil, and be very liberal with the salt and black pepper. Pan fry for 2-3 minutes on each side over a high heat, until nicely browned and slightly crispy. Serve the salad on a plate, topped with the hot sausage patty - it’s a southern French bistro classic!
