Lightly Curried Lamb Burgers

  • 500g quality lamb mince
  • 1 green chilli, deseeded and chopped
  • 1 tsp each ground coriander and cumin
  • 1 tsp toasted mustard seeds, crushed
  • 2 crushed garlic cloves
  • Pinch of cinnamon, salt and pepper
  • Olive oil
  • Buns, minted yoghurt and salad leaves, to serve
  • Mix the lamb, chilli, spices and seasoning in a bowl and form into 2cm-thick patties with damp hands. Brush with oil and leave in the fridge for at least 30 mins.
  • When ready, cook the burgers on a barbecue for about 5 mins per side, or until cooked through. Serve in buns with minted yoghurt, chutney, leaves and whatever else you fancy.
