Lime and Peanut Salad

  • 2 tbsp olive oil
  • 60g peanuts
  • 1 tsp mustard seeds
  • 10 fresh curry leaves
  • 1 chopped red onion
  • 1 chopped potato
  • ½ tsp turmeric
  • 300g cooked basmati rice, cooled
  • 1 small lettuce, chopped
  • ½ cucumber, chopped
  • For the Dressing
  • 50ml lime juice
  • 50ml olive oil
  • 1 tsp Dijon mustard
  • Fry the peanuts in the oil for 5 mins, then add the curry leaves and mustard seeds, and sizzle for 20 seconds. Add the potato, onion and 2 tbsp of water. Cover and cook for 10 mins to soften, then remove from the heat and add some salt and pepper. Leave to one side to slightly cool for 3 mins.
  • Transfer everything to a salad bowl and add the remaining ingredients. Gently toss to combine. Mix the salad dressing ingredients in a small bowl and drizzle over the salad, then toss to combine before serving.
