Lime and Peanut Salad
- 2 tbsp olive oil
- 60g peanuts
- 1 tsp mustard seeds
- 10 fresh curry leaves
- 1 chopped red onion
- 1 chopped potato
- ½ tsp turmeric
- 300g cooked basmati rice, cooled
- 1 small lettuce, chopped
- ½ cucumber, chopped
- For the Dressing
- 50ml lime juice
- 50ml olive oil
- 1 tsp Dijon mustard
- Fry the peanuts in the oil for 5 mins, then add the curry leaves and mustard seeds, and sizzle for 20 seconds. Add the potato, onion and 2 tbsp of water. Cover and cook for 10 mins to soften, then remove from the heat and add some salt and pepper. Leave to one side to slightly cool for 3 mins.
- Transfer everything to a salad bowl and add the remaining ingredients. Gently toss to combine. Mix the salad dressing ingredients in a small bowl and drizzle over the salad, then toss to combine before serving.
