Lime and Sriracha Potato Salad
- 750g new or baby potatoes
- 80g quality mayo
- 50g soured cream
- 2 tbsp sriracha or other hot sauce
- 1 lime, zest and juice
- 1 tsp honey
- 6 sliced spring onions
- ½ bunch of coriander leaves, chopped
- ½ tsp chilli flakes
- Boil the potatoes in salted water for about 15 mins, or until tender. Drain and leave to cool. Whisk the mayo with the sriracha, soured cream, lime juice and zest, honey, most of the coriander, half the spring onions, and some seasoning. Toss in the potatoes, mix to coat, then sprinkle with the rest of the spring onions and coriander before serving.
